Rodrigo de la Calle, the Madrilenian chef who has spent more than a decade producing 100% vegetarian cuisine, has opened a new venue in Madrid. There is no à la carte menu here, just two tasting menus that are adapted to seasonal availability. Flexitarian diners can broaden their options with meat, fish, seafood and cheese dishes. Drinks include plant-based beverages, wine, or a mixture of the two.
