Andrés Madrigal, well-known to frequenters of the Madrid culinary scene, is back in the capital after a decade away from Spain. He’s taken over the old Arce venue, now with only a handful of linen-draped tables. A short à la carte menu built around the seasons and a tasting menu. Classic cuisine with the chef’s signature style and the finest seasonal ingredients. Red mullet in bouillabaisse sauce, pigeon with mole poblano and freshly caught hake with yellowfoot chanterelle mushrooms. It’s not cheap but definitely worth a visit. The return to Madrid of a legend.
