Alberto Criado, a Basque chef based in Cantabria and founder of the Longfinned Tuna Brotherhood, lives up to his name in this simple yet surprising eatery. In season, the menu features over twenty different longfinned tuna dishes and, by request, a full tasting menu dedicated entirely to this prized tuna. There are also set lunch and weekend menus, as well as non-tuna options like slow-cooked egg with potato and truffle, creamy rice with squid in ink or roast lamb. At the bar, you can enjoy some pinchos or an excellent Spanish omelette. It’s a place that leaves a lasting impression.
