A unique project led by young and talented chefs Jorge Muñoz and Sara Peral. In a chalet on the Ribera del Manzanares, we find this restaurant with two small dining areas. There is no à la carte menu; guests can select from one of their two tasting menus that change seasonally and include cold meats, offal dishes, fish and game, many of them aged, smoked or matured. The experience begins in the attic, where guests are welcomed with cured meats by the fireplace and shown the aging chambers and wine cellar. Surprising wine list, with rare labels. Excellent service. A bold concept, only suitable for the most intrepid palates.
