Two young and talented chefs, Jorge Muñoz and Sara Peral, head this project. In a chalet on the Ribera del Manzanares, we find this restaurant with two small dining areas. There is no à la carte menu; guests can select from one of their two tasting menus that change seasonally. Cold meats, offal dishes, fish and game, many of them aged, smoked or matured. Stark, bare, minimalist cuisine, devoid of artifice, with a refined technique. Surprising wine list, with rare labels. Excellent service. An exceptional and radical project, not suitable for everyone. Only for intrepid palates.
