Chef Diego Muñoz presents creative cuisine that draws from his Latin American and Peruvian roots, where embers take center stage in the preparation of meats and fish. Dishes such as black hake with miso, dashi, shiitake mushrooms, and broccolini, oyster and beef marrow tartare, and ricotta with roasted strawberry agnolotti showcase his style.
