Miguel Galino does it all—he greets guests, takes orders, cooks and serves. In this grill house, every detail passes through his hands. He works exclusively with top-quality Spanish products: Galician meat and fish, local T-bone steak and carefully chosen wines. Everything is cooked over holm oak embers with near-monastic precision: controlled heat, exact resting times and just the right amount of salt. The menu is short, but needs nothing more, and is complemented by a tasting menu. This is a place to eat without watching the clock, in a simple dining room with only three tables and two sittings a day, always by reservation. A great discovery.
