Chef Alberto Juárez launched this project after a long international career in the hospitality world. His cuisine combines Mediterranean roots with globetrotting influences in a proposal where fish often takes centre stage. Dishes such as sea bass ceviche, pig’s trotters stuffed with black pudding or a faux prawn risotto reveal a cuisine that is flavourful, recognisable and full of personality.
