Amid the cobbled streets of Castrillo de los Polvazares, this stone-and-wood retreat preserves the charm of the old maragata inns. The Castilian–medieval-style dining room feels frozen in time as the cocido Coscolo arrives at the table: the traditional maragato stew served in reverse order—first the meats, then the chickpeas and finally the soup—but with the chef’s Navarrese touch, making it livelier and more personal. Everything is homemade, from the cured meats to the smoked products. Here, tradition isn’t told, it’s savoured in three acts.
