Since 1978, the Santamaría brothers have been keeping traditional cuisine alive in the heart of the Madrid mountains. Among the restaurant’s most famous dishes are oxtail, cod in pilpil sauce or Vizcaya-style, and entrecôte from the local mountains, joined in winter by good soups and stews.
