On the outskirts of Lekunberri, in an industrial estate, you’ll find a factory, shop and dining room all under the same roof. This place, with a soul of its own, pays tribute to the native Pío Negro pig (Euskal Txerri), which was on the verge of disappearing until José Ignacio Jauregi lovingly brought it back. Don’t expect modern techniques or elaborate sauces, just respect for the product. Two tasting menus are offered, each course showcasing a different cut of the pig. The dining room is warm, with a fireplace, dressed tables and details that connect with the Navarrese landscape. Who would have thought a pig could offer so much?
