Chef David Yárnoz’s tasting menu combines the restaurant’s most iconic dishes with new creations. His cuisine is sophisticated, creative and elegant, rooted in local ingredients and firmly committed to sustainability. Asparagus, chistorra sausage, trout and game often feature on the menu. In a bright dining room with an open kitchen, linen-draped tables and lovely views of the surrounding nature, the service is attentive to every detail. The wine cellar boasts over 300 labels—the pairing option is well worth choosing. Origen, his more informal concept, is located on the ground floor. One of Navarra’s greats.
