TV chef Samantha Vallejo-Nágera has transformed this 17th-century Castilian mansion into a restaurant with five guest rooms. Set in the main square of Pedraza, it features carefully curated rustic décor. The restaurant is split into two areas: a main dining room offering two tasting menus, and a more casual bar and terrace serving tapas, small dishes and grilled meats. Classic grilled food, where simplicity and top-quality ingredients take centre stage.
