This is achieved in its traditional cuisine with avant-garde touches. Classics that never go out of fashion, such as garlic soup and duelos y quebrantos (a Quixotean dish of scrambled eggs and chorizo) are the mainstays of the menu. The croquettes and the mixed vegetables are delicious too. In other words, traditional dishes prepared with TLC.
