With a clear commitment to organic and locally-sourced products, the offering revolves around Basque cuisine with avant-garde touches. The philosophy is based on tradition and nature. The tasting menu takes diners on a journey through the ecosystems of the Urdaibai Reserve, where the restaurant is located, featuring products such as anchovies, albacore tuna and sea bass, along with a selection of cheeses.
