Under the direction of Chef Diego Laso (Momiji Atelier), this restaurant reinterprets Japanese cuisine through a Mediterranean lens, with absolute respect for local ingredients. The menu features tempting dishes such as red tuna tartare with cured yolk and caviar, assorted sushi and the now-famous Albufera eel temaki. If choosing proves difficult, the tasting menus are always a safe bet. The space, located in the hotel lobby, includes tables, a sake bar and a bar ideal for enjoying live show-cooking.
