The Manzano family’s cuisine continues to evolve without losing sight of the origins laid down by Marcial and Olga. Nacho and Esther continue to lead the way, now joined by Chus, the third generation, who brings youth, freshness and a new perspective to a house where memory has always been an essential ingredient. The tasting menus travel through the Asturian landscape, journeying from the Cantabrian Sea to the mountains through product, seasonality and creativity. The legendary croquettes and rice are still there, but they stopped being the only reasons to make the trip up to La Salgar long ago.
