In this historic tavern in Palencia, run by Pablo Payo, wood fills every corner, coats of arms adorn the walls and the scent of the wood-fired oven evokes home. The menu is pure Castilian essence: homemade black pudding, sopa albada, stewed pigeons, sheep’s cheese and the legendary roasted Churro suckling lamb, tender and golden.
