In this historic tavern in Palencia, run by Pablo Payo, wood fills every corner, coats of arms adorn the walls and the scent of the wood-fired oven evokes home. The menu is pure Castilian essence: homemade black pudding, sopa albada, stewed pigeons, sheep’s cheese and the legendary roasted Churro suckling lamb, tender and golden. Wine is served in jugs and long lunches stretch into desserts of torrijas (French toast) with ice cream and coffee brewed in a pot. An unmissable stop along the Camino de Santiago.
