A restaurant with just four tables and a warm, Nordic-inspired décor located on the first floor of the Hotel Cañitas-Maite, which can be accessed through a separate entrance. Javier Sanz and Juan Sahuquillo present their innovative signature cuisine, heavily focused on vegetables and local products. They offer two tasting menus with ingredients such as game meats, trout, Castilian cockerel, wild herbs, mushrooms and ancient tubers. The wine cellar is not very extensive but interesting, with little-known labels and the option of a non-alcoholic pairing. Attentive and friendly service. Worth keeping an eye on their evolution.
