The renowned chef Miguel Cobo presents a single tasting menu centered around the evolution of humanity through different historical stages. For each stage—such as Atapuerca, Altamira or Rome—he uses presentations and techniques from each period. To complement the experience, a suggestive and extensive wine list is available. This small, minimalist dining room, with bare tables and seating for just twelve guests, is a truly unique and essential place. To round off the experience, a visit to the Atapuerca archaeological site is highly recommended.
