This iconic bar in Maliaño has taken a new turn since two Peruvian chefs took the reins. Cantabrian classics remain, but the offering is enriched with Peruvian flavours. At the bar, vermouths, squid and casual bites take centre stage. At the back, the dining room allows the concept to soar higher, with dishes such as Breton scallop with condensed leche de tigre, Nikkei parihuela with soft-shell crab or a surprising mango and coconut ceviche-style dessert with savoury notes that catches you off guard—in a good way.
