Right in the historic centre of Cuenca, this spectacular venue with stone walls, set in the former stables of a 16th-century manor house, welcomes diners. The cuisine, Manchegan at its base with contemporary touches, is built on seasonal local products. Both the à la carte menu and the tasting menu offer technically accomplished dishes with perfect control of cooking points. Among the most recommended: cured trout with ham meunière, cod with ajo blanco, venison tartare or smoked duck cannelloni. All of it accompanied by an extensive wine cellar. An experience that leaves a very good taste in the mouth.
