This small, laid-back spot has earned its reputation thanks to almadraba red tuna. It is the undisputed star here, with more than a dozen preparations and cuts such as parpatana, facera, morrillo and contramormo (all parts of the head). Every bite is a marine feast. Among the most celebrated dishes are the spicy tartare with truffle, the Sanlúcar prawn carpaccio and the pistachio-topped belly.
