Polemic and provocative, Andoni Luis Aduriz, the soul of the establishment, changes the menu every year. They close several months a year to concentrate on creativity. A unique, some twenty-step proposal that lasts for around two and a half hours. It is never repeated. Inspiration, creativity, emotion. Difficult to define.
