In the medieval square of Aínsa, in a modern dining room with mountain views, the Sobrarbe region becomes the menu. The cuisine of Ramón Aso and Josetxo Souto combines precise technique and regional storytelling, with dishes that play with textures, clean flavours and nods to small producers. There are surprises, but no smoke and mirrors, and elegance without solemnity. Guests can enjoy two tasting menus and a wine cellar that looks to Aragón and beyond. The staging is meticulous and the pace finely tuned. Closed from December to March. An essential place for getting to know Aragón.
