Tonino Valiente presents creative, highly personal signature Aragonese cuisine, with the dynamism of a gastrobar and an open kitchen as part of the show. The set menu changes with the market and plays with stocks, Catalan nods and the Huesca pantry without ever becoming solemn. Surf and turf, and ternasco lamb, appear naturally in a technical proposal with character. Aránzazu Sáinz leads the dining room with care and precision. The space is small, with the bar taking centre stage and an aesthetic of its own. It has personality, know-how and enough bite for Huesca to boast without raising its voice.
