In the historic San Julián complex in Barbastro, home to the regulatory council of the Somontano DO, you will also find this restaurant. In a spacious setting with several dining rooms featuring understated décor and gentle lighting, the cuisine looks to the vegetable garden and the Aragonese pantry, with carefully crafted textures and stocks. Ingredients such as pink tomato, ternasco lamb, mushrooms and local cheeses set the tone of the menu. The truffle omelette, tomato tartare and flavourful rice dishes are always a safe bet. As for drinks, there’s no room for error: only Somontano wines are served. A pleasant experience.
