The cooking stays true to tradition: pipirrana (tomato, cucumber, peppers and onion salad), fried chicken and rabbit, garden vegetable scrambles, flavourful blood sausage and meats—poultry, pork, lamb or beef. From the sea come pilpil-style prawns that can brighten any day. And the homemade desserts, such as leche frita (fried milk) or tocino de cielo (yolk egg custard), offer a lovingly crafted finale. Everything here tastes of the past, with just the right touch of the present.
