Open since 1958, this restaurant has made the vegetables from the Aranjuez market gardens its hallmark. The signature cuisine focuses on produce, prepared with sensitivity and precision to create subtle, elegant dishes deeply rooted in the local area. It offers an à la carte menu, a tasting menu and an excellent wine list at reasonable prices. The space is divided between the Atelier, on the ground floor with a more informal atmosphere, and the fine-dining room on the upper floor. A kitchen where the vegetable garden sets the tone.
