At the helm, the Bayón brothers maintain a seasonal cuisine rooted in quality ingredients. At the busy bar, fine tinned goods, cured meats, cheeses and a solid range of dishes for sharing take centre stage. In the modest dining room, stews and marinades stand out, with tripe, Iberian pork cheek in Pedro Ximénez and oxtail among the highlights.
