This “wild” cuisine, as they describe it themselves, champions local, market-fresh products, sourcing ingredients from small artisanal producers in the Madrid mountains. The dishes, with a natural aesthetic, feature well-crafted stews and stocks full of sensitivity and flavour. There’s no menu—everything revolves around two tasting menus that always include their fantastic tripe, the restaurant’s iconic dish. The wine cellar is radical and focuses exclusively on natural wines. The space combines a rustic, Nordic-style dining room with a greenhouse-like terrace overlooking the kitchen garden.
