In Cintruénigo, within the hotel of the same name, awaits an elegant dining room with soft lighting and well-dressed tables. The cuisine combines tradition and originality, with a menu that showcases Navarre’s vegetable garden, as well as meats and seafood. The opening of homemade cured meats with toasted bread already convinces, but the gazpachuelo (Andalusian fish and potato soup) served in an ice block steals the show. The braised pig’s trotters, with sauce made for mopping up, are pure enjoyment, and the fresh, citrusy finale provides a light closing touch. Here there are no dogmas or set rules, only flavour. An almost obligatory stop along the way.
