This restaurant offers a contemporary take on Castilian cuisine. “Flavour, creativity, product and tradition” is how chef and owner Óscar Hernando defines his culinary philosophy. Both the à la carte menu and tasting menu showcase local ingredients such as Segovian suckling pig and lamb, as well as those from its own wine cellar and vegetable garden, such as judiones (large beans) from La Granja. In autumn, mushrooms take centre stage. The extensive and impressive wine list features a strong selection of French labels. Warm, attentive service in a space divided between a large dining room with linen-draped tables and a more casual bar area. A true Segovian benchmark.
