Chef Sergi Palacin describes his cuisine as "restless", and rightly so, as his dishes are full of creativity and personality. Kombucha, pickled sea fennel, and cured, dried, and smoked sea bass roe are some of the ingredients that he prepares to use in his recipes. Drawing from his previous experience in Bangkok, his dishes blend traditional elements with Asian flavours and local produce. By his side, there’s a young and eager team.
