Chef Rodrigo Herrero is behind this venture, situated in the spectacular cloister of Las Francesas. His cuisine draws on family memories and is inspired by his grandfather Román, combining traditional foundations with a contemporary look. Local ingredients take centre stage, with a particular focus on hearty stews, pulses, game and Churro lamb, one of the province’s great gastronomic icons. In addition to the à la carte menu, there are two tasting menus that change with the seasons and an extensive, carefully curated wine list. The elegant restaurant is spread over two floors, with beautifully laid tables and several private dining rooms. A sure bet.
