At the top of a small hill in Axpe, in the Atxondo Valley, renowned chef Tetsuro Maeda blends his Japanese roots with his experience of Basque grill cuisine. The tasting menu changes constantly and places particular emphasis on vegetables, sourced from a vegetable garden covering more than 10,000 m² and featuring over a hundred varieties. The experience, which is enjoyed in unison by the entire dining room, begins with appetisers served at the kitchen counter and takes diners on a journey full of magic. The service is top-level and the wine list is on the expensive side. A proposal that doesn't disappoint.
