Farmhouse in the Atxondo valley where Tetsuro Maeda presents his take on the classic Basque grill, infused with touches of Japanese cuisine. In a tastefully minimalist dining room with two large windows that look like paintings, a single tasting menu is served, with all diners eating at the same time. Local ingredients take centre stage. Appetizers are served at the kitchen while looking at the grill and then the show continues in the dining room. It all ends on a high note: prawns, fish and T-bone steak. High-level service and wine list with premium prices. Something different in the area.
