A unique experience beside the Añana salt flats. Housed in a former salt warehouse, a U-shaped counter seats fifteen diners ready to be surprised. There’s no menu—only a surprise tasting menu that changes according to what the local producers have to offer. Free-range eggs from Espejo, Valdegovía potatoes, foal steak tartare or charcoal-grilled foal are just some of the dishes that may appear. Everything is prepared live, with constant interaction between the chef and diners. An intimate, locally rooted experience, perfect to round off a visit to the Salt Valley.
