Inside the El Molino service area, tucked away in the private rooms of Steakhouse by Aitor Pozuelo, hides a carnivorous temple where every cut is selected and dry-aged with precision. The space is sober and elegant, presided over by the largest ageing chamber inside a restaurant anywhere in Spain. The tasting menu tells the story of the cow through a series of courses that use milk and meat from breeds across several continents. Only twelve diners are seated per service, accompanied by a wine cellar up to the task and a team that conveys real expertise. In the Vega de Granada, few meat-focused experiences are as powerful or as meticulously crafted.
