Asador Nicolás

Xabier Ruiz, grandson of the founder, keeps alive the essence of one of the country’s great meccas of steak, with more than sixty years of history behind it. A very special “txuleta” (T-bone steak) is served here, with high fat marbling, the outer fat trimmed back to a minimum and grilled on an inclined grill. There are three tasting menus, alongside an à la carte selection that includes new dishes such as broth, carpaccio or steak tartare. For dessert, Pepi’s cheesecake is a guaranteed hit. Paper tablecloths—a nod to Tolosa’s paper mills—and a historic wine cellar filled with old labels round off the experience.
