This intimate restaurant in the centre of Tudela transforms the produce from the Ribera vegetable gardens into a seasonal tasting menu. Luis Salcedo prepares the vegetables with technical skill and respect for their natural cycle. Asparagus, artichokes, mixed vegetable stew, borage and pocha beans are served without being disguised as anything else, although they are sometimes given a touch of elegance. The menu is ambitious, featuring locally sourced ingredients and a wine list curated by Juan Salcedo. Booking is recommended.
