In a farmhouse surrounded by nature, David Yárnoz presents a tasting menu that revisits the house classics while weaving in a carefully measured creativity. The cuisine, sophisticated and elegant, is rooted in local ingredients, seasonality and genuine sustainability, with frequent nods to vegetables, trout, chistorra sausage or game. The dining room, bright and serene, looks onto the open kitchen and runs with quiet precision under the direction of Jaione Echarri. The wine cellar, with more than three hundred references, and the pairing complete one of Navarra’s essential dining destinations.
