Chef Eneko Atxa expresses his passion for Basque cuisine through an intimate connection with the land and local products. His dishes seek a balance of flavour, texture and aesthetics, using contemporary techniques and giving clear prominence to fish and seafood. The wine cellar, modest for the level of the proposal, supports the meal without dazzling. The space, located inside a hotel and sharing common areas, is functional but somewhat impersonal, far from the warmth one might expect at a table of this calibre. A solid option for those looking for reinterpreted Basque flavours, though with room to define a more distinctive identity.
