A modern and elegant eatery run by Chef José Luis Pastrana in San José de la Rinconada. Through an à la carte offering and a tasting menu, he reinterprets Andalusian tradition using modern techniques, quality local ingredients, plenty of slow cooking and sauces that beg for bread-dipping. Choosing is no easy task, as everything sounds tempting. Standout dishes include the egg yolk-filled bun, the whisky-flavoured sirloin steak tartare, the pringá ravioli and the rice dishes.
