In Cádiz’s old town, surrounded by walls of local oyster stone, Dutch chef Leon Griffioen and Cádiz-born Paqui Márquez reinterpret the city’s culinary history. Their cooking draws on French technique while looking to the different cultures that have left their mark on Cádiz. They offer two tasting menus, accompanied by a wine list focused on small producers. The service team explains the story behind each course in detail, although in some dishes technique outweighs balance. The restaurant is minimalist, with an open kitchen and a glass-fronted wine cellar. A highly personal proposal that is well worth discovering.
