In Aracena, this modern, well-designed venue offers a journey between the mountains and the sea. Iberian pork, mushrooms and vegetables meet fish and seafood from Isla Cristina in dishes such as pocha beans with scarlet shrimp or cod with an Iberian ham pilpil, where the chef’s touch is clear. The cooking is balanced, flavourful and very much rooted in the area. Service is exquisite, the dining room is run with care and the wine cellar is very well chosen.
