Seasonal vegetables from the Ribera Navarra take centre stage here, treated with care, technique and personality by Nacho Gómara. His cooking is traditional, with well-judged modern touches. Meat, fish and seafood accompany, but never distract. The tasting menu captures the essence of Navarra’s vegetable landscape, presented in every texture, flavour and form.
