Housed in a former metal workshop in Bilbao La Vieja, the Demaio brothers bake some of the city’s best pizzas. They work with organic flours and carefully selected ingredients, always in pursuit of the perfect dough. There are two styles to choose from: Neapolitan or Roman. The dough is light, full of flavour and the kind that makes you want to order another without hesitation. The Altomonte, Trentina, Piccantissima or Bologna are among the must-orders, and their limited editions are well worth keeping an eye on. A good selection of beers and friendly, approachable service complete the experience. A true temple of pizza in Bilbao.
