Juan Aceituno pays tribute to his grandmother Juana “La Chucha” and to the traditional cuisine of Jaén through a contemporary and highly personal lens. His menu explores the flavours of the old farmhouses, vegetable gardens, pig-slaughtering festivals and the mountains, reviving recipes and ingredients linked to his memories and his homeland. The three tasting menus showcase a cuisine that has gained in maturity, precision and character, with technique serving flavour and some of the produce sourced from his own vegetable garden. An experience deeply rooted in Jaén, its heritage and its culinary traditions.
