Chef Juan Aceituno pays tribute to his grandmother Juana "La Chucha" by reviving classic recipes from Jaén's culinary heritage through three tasting menus. Signature dishes like andrajos (a hearty stew) and tripe stew are notable for their refined flavours and use of seasonal ingredients, many sourced from the restaurant's own garden.
