Juanjo Mesa develops sincere, highly personal cuisine, deeply tied to his roots in Pegalajar and the flavours of his childhood. Jaén tradition, stews and the family recipe book are the starting point for a contemporary proposal in which flavour always comes before artifice. His cooking looks to the mountains, the product and traditional eateries, reinterpreting that legacy through his own lens.
