This restaurant, founded by the much-missed Marisa Sánchez, mother of chef Francis Paniego, is part of the history of traditional Rioja cuisine. The Paniego family is always present, whether in the kitchen, in the dining room or in the wine cellar. In this elegant dining room, popular dishes and grandmother's recipes are brought back to life. Emblematic croquettes, chickpeas with clams, caparrones beans, oven-baked sea bass with fennel or battered hake followed by strawberries macerated in vinegar with ice cream.
