Salamanca-born chef Jorge Lozano was one of the first to embrace the gastrobar concept. His approach is clear: original, flavourful and fun tapas with influences from near and far. Among the classics that made him famous are the potato salad with tuna belly, the very spicy bravas potatoes, the croquettes and the fried baby squid with lime zest.
